Roasting Chart -. For Best Results: 1. Set oven at 164 degrees C or 325 degrees F. 2. Insert the thermometer at least 2 inches or 5cm into the thickest part of the meat, away from bone or gristle. 3. Place uncovered roast in oven with thermometer dial facing door for easy reading. 4. Remove roast when pointer reaches desired temperature, indicating desired degree of cooking.
